Mediterranean Pita

Total Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 1
  • 1 plum tomato, diced
  • 1/2 cup diced cucumber
  • 1/2 cup fresh baby spinach
  • 1/4 cup crumbled feta (optional)
  • 1 teaspoon red wine vinegar
  • 2 teaspoons extra virgin olive oil
  • 1/8 teaspoon black pepper
  • 1 whole wheat pita bread
  • 1 veggie burger, warmed

Recipe

  • 1 cook the vegetable burger patty as desired.
  • 2 then combine the tomato, cucumber, spinach, feta, vinegar, oil, and pepper.
  • 3 toss.
  • 4 spoon the salad mixture into the pita.
  • 5 crumble the vegetable burger on top.
  • 6 note you can use a vegan sub cheese for the feta if desired.
