Mediterranean Pita

Ingredients
- Servings: 1
- 1 plum tomato, diced
- 1/2 cup diced cucumber
- 1/2 cup fresh baby spinach
- 1/4 cup crumbled feta (optional)
- 1 teaspoon red wine vinegar
- 2 teaspoons extra virgin olive oil
- 1/8 teaspoon black pepper
- 1 whole wheat pita bread
- 1 veggie burger, warmed
Recipe
- 1 cook the vegetable burger patty as desired.
- 2 then combine the tomato, cucumber, spinach, feta, vinegar, oil, and pepper.
- 3 toss.
- 4 spoon the salad mixture into the pita.
- 5 crumble the vegetable burger on top.
- 6 note you can use a vegan sub cheese for the feta if desired.
