Lamb And Eggplant Sandwiches

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 5
  • 1 lb ground lamb
  • 2 cups stove top stuffing mix
  • 1 egg
  • 1 teaspoon garlic (if using fresh use more)
  • 1/2 teaspoon dried rosemary
  • 5 tablespoons butter
  • 2 teaspoons flour
  • 1/4 cup cold water
  • 1 eggplant
  • 1/4 cup extra virgin olive oil
  • 1/2 cup lemon juice
  • 3 fresh garlic cloves

Recipe

  • 1 slice eggplant thick and place in a strainer and salt generously let sit for one hour.
  • 2 combine lamb, stuffing, 1/4 teaspoon rosemary, 1 teaspoon powdered garlic, & egg in a medium bowl.
  • 3 make small burger patties and put them between two slices of eggplant
  • 4 pre-heat oven at broil at 450.
  • 5 place evoo on the bottom of cookie sheet and place sandwiches on the cookie sheet.
  • 6 broil for 7 minute on each side.
  • 7 place butter, fresh garlic, remaining rosemary and lemon juice in a small sauce pan and simmer of 5 min.
  • 8 combine water and flour mix till flours dissolved.
  • 9 add to sauce pan to thicken.
  • 10 pour sauce over sandwiches.
  • 11 serve!
