Mini Smoked Cheddar And Granny Smith Apple Sandwiches With Roast

Ingredients

- 1 loaf sourdough bread (use your favorite bakery and shape)
- 1 granny smith apple, sliced in thin 1/4 inch wedges
- 1/2 lb cheese, yellow smoked cheddar, thinly sliced
- 1/2 lb cheese, oak smoked cheddar, thinly sliced
- 1/2 cup mayonnaise, store bought & high quality
- 1 red onion, large
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon olive oil
- 1/4 cup softened butter
Recipe
- 1 *cut ends and peel paper off of onion, wrap in foil and place in 350 degree oven to roast for 30 - 40 minutes. allow to cool.
- 2 *place onion, mayo, olive oil, salt & pepper in a food processor and blend until completely smooth.
- 3 *slice bread into the desired shape and size. i like to do small 3x3 sandwiches for parties, but you can make them regular full serving size if desired.
- 4 *spread mayo on each slice of bread. add slices of both cheese types and apple to the bread and make a sandwich.
- 5 *spread softened butter on outside of sandwich and cook on a grill pan until cheese is melted and outsides are golden brown.
- 6 *serve hot or at room temperature.
