Low Carb Chicken Sandwich

Ingredients

  • Servings: 4
  • 8 leaves romaine lettuce hearts (large)
  • 1 lb ground chicken breast
  • 1 medium tomato
  • light ranch salad dressing
  • 1 medium avocado
  • 6 slices bacon (crumbled) or 4 tablespoons bacon, pieces
  • salt and pepper
  • onion powder or 2 tablespoons chopped onions
  • 1/2 cup shredded cheddar cheese
  • pam cooking spray

Recipe

  • 1 combine in a large bowl the chicken meat, bacon, salt, pepper, onion. form into patties. this makes two large patties. spray grill or pan with pam spray and cook the chicken. i use a foreman grill. after it is cooked add the cheddar cheese to the patties and microwave for a few seconds to melt cheese. then cut up the tomato and avocado. rinse the lettuce leaves and dry with paper towel. drizzle dressing on one leaf then put sliced tomatoes and avocado on leaf, place chicken patty on top of then drizzle dressing and place lettuce leaf on top. wrap tightly. serve and eat like a sandwich. makes for a very tasty meal.
